The winner of the Athenos Feta giveaway is Julia!  Her advice for getting over a fitness hump included: “Having an event to train for is what has kept me going. Without knowing I have a long run to conquer, I’d probably still be in a major slump.”  There were so many good nuggets of advice that I’ve compiled a list of my favorite suggestions for getting over a fitness or food hump – will post next week!

 

My mom and had the MOST amazing breakfast!

This was the ULTIMATE VERSION of Grilled Banana Sandwich.

 

What made this GBS so good?

Whole wheat cinnamon chip bread from Great Harvest!  It made the GBS so decadent and chewy.

 

GBS is basically two slices of French toast with a melted banana stuffed in between.  Here’s the recipe!

Only problem was that I ate it WAY too fast!  It was so good that I inhaled it.  I should’ve savored it a bit more.  🙂

 

Mom and I went on a 45-minute walk with the dogs this morning.

Matching shoes!  I always buy Brooks Summons and gift my older pair to my mom.  🙂

 

Plans for today include…  more home shopping!  And eventually, we’re going to come home so I can cook us a healthy lunch.  I just bought this basil plant and want to do something fun with it before I kill it.  :)  I have a black thumb!

    That’s so cool that you have the same shoe size! My mom and I have very similar tastes in shoes (we even own some matching pairs) but she wears almost a full size larger than I do.

    that basil looks so good! you should make a panini (i’m really in grilled sammich mode lately) with hummus, tomato, spinach, and basil. now i want one….

    Your breakfast makes me wish I didn’t use up all my bananas yesterday!
    I imagine in must be so much fun to spend time with your family in your own home. My Mom and I live in the same city until August when I move, so we don’t spend much time at my house.

    That basil plant is begging to be made into a pesto. You can make it stretch by adding in other herbs, or sun-dried tomatoes! yumm.

    You can blanch (boil for a couple of minutes) the basil, transfer to a cold water rinse, then throw in food processor or blender with olive oil, minced garlic or cloves and plain greek yogurt to make a creamy pesto sauce to serve over whole wheat pasta. Toss with grape tomatoes or whatever fresh veggies you have!

    margherita pizza!!! so, so good! I had a basil plant about that size and it is now down to 2 little stems but i have managed to keep them alive for over a month now. woohooooo!!

    I have a black thumb too. I even managed to kill off my entire Aerogarden. You aren’t suppose to have to do anything to those except add water every so often. Are the basil plants expensive? I love basil, it might be worth it for me to buy a plant if they are fairly inexpensive.

    So cute about the matching shoes! I have a black thumb too – I can’t buy plants anymore! I need to make sure I never have plants in my future office unless someone else can take care of them, or they’re fake so my patients don’t worry about me! How is your hubs with plants?

    Omgosh I wish I had that for breakfast instead of pancakes!

    And you can always make a basil hummus for something different if you need to use up a lot of basil before it goes bad. 🙂

    I almost bought a basil plant at the Farmer’s Market this morning, but I chickened out bc I’m afraid I’d kill it. The girl was talking about how it’s best to plant it in fertilized soil by using cow manure. Ummm…I’m a city girl, unfortunately. No cow manure around here.

    Anyway, I bought some cut basil from her and I’m excited to use it today!

    ooooh! glad i’m not the only black thumb! i received a desk plant when i started my new job as a “welcome gift”…i cringed when i saw it sitting there, knowing it would be dead within no time. it was.

    i’m pretty sure i need 2nd breakfast after seeing that DELICIOUS looking GBS!!!!!

    Wow, so decadent looking. My friends would definitely eat this, and never notice it was healthy. I love mashed banana in sandwiches. One way to slow down eating things like this is to use a knife and fork. I use it to eat pizza (except at the end) and it gets me to really slooooow down and enjoy it more.

    Don’t kill the basil! The key is to water it only when it gets droopy and sad and keep it in the sunny window.

    My favorite thing to do with basil is either pesto or just spreading the leaves over fresh grown tomatoes with a nice vinaigrette. Nothing better!

    Ooh make a tomato basil salad with your basil plant! Well, with the leaves, not the plant. 🙂 I like tomatoes with buffalo mozzarella (the little mozz balls) or even just with the basil. Either way with a drizzle of EVOO and balsamic vinegar. Noommmmmm! 🙂
